The 12 Days of Yule – Day 11 – Apricot Bars

Apricot Bars

These low-fat bars contain ginger, which is a lovely winter spice for calming upset tums. Apricots are high in iron, which helps build good blood, so an all-round pick-me-up!

Ingredients

1 cup buckwheat, soaked and dehydrated ( I do plenty of this in advance and keep it in the fridge for whenever it’s needed.)

1/2 cup dessicated coconut

25 dried unsulphured apricots, pre-soaked

1 tsp powdered ginger (a bit more if you like it!)

1 dsp coconut nectar (sugar alternative made from coconut.)

Method

Grind the buckwheat and coconut to a fine powder in a coffee or nut grinder.

Transfer to a food processor and add the apricots, ginger and coconut nectar.

Mix thoroughly until you have a sticky mixture.

Transfer the mixture to a silicone pie tray and spread evenly. Score into 8 bars with a pizza cutter.

Dehydrate for a few hours to repel some of the liquid.

freeze or refrigerate until needed.

Tropical Bug Buster

I have nearly had a cold for 2 days now and frankly, I’m fed up with it.

One of the benefits of being healthy and having a good immune system is that I don’t get ill very often. I do pick up viruses, but usually shift them within a few hours. Two days is too long for me to feel “not-quite-right.” Yes, I know, I’m a prima donna!

Anyway, my impatience got the better of me and I made this today:

Blend the following:

1 litre water kefir (drain out the grains and use them again!)

1 banana

1 inch slice of pineapple, chopped

1/2 mango

1 kiwi fruit

1 tsp ginger powder

1 tsp baobab

2 zinc tablets, crushed

Make a jug full. Drink as required.

I would have liked to put a teaspoon of local honey in this, but I don’t have any…=)

I’m drinking it now and I feel better already. I can assure you I won’t be putting up with an “almost cold” tomorrow!

A Dash of Ginger with That…

The quest for the perfect Raw Curry goes on, but I did manage to make a sort-of curry sauce today. It’s not good enough to post yet, but I’ll work on it.

I had a busy and stressful day today (my sculpture exploded in the kiln yesterday, so I had some extensive repairs to do!) and I had an energy slump mid-afternoon. Fortunately, a punnet of cherries and a bar of raw chocolate soon sorted that out. How decadent this diet is, where Chocolate and Cherries a healthy meal!
I found a lovely shop in Chichester (my nearest city) which sells all sorts of wholefoods including lovely raw stuff! I can highly recommend it. The shop is called Manuka Wholefoods and it’s tucked away in Little London Walk (which used to be called Sadler’s Walk but now for some reason isn’t.)

Check it out if you’re in the area, or look them up online. I bought some gorgeous raw chocolate coated mulberries… mmmmmm. =)

Today’s recipe is very simple, but delicious. It’s a really top juice with a bit of a kick:

Manjingo Juice
1 melon (flesh only – the worms got the seeds and rind!)
1 carton squeezed orange juice (because I was lazy!)
1 tsp ground ginger.
Juice the melon. Pour into a tall jug and add the ginger. Top up with orange juice.
This was enough to keep two of us going all evening while we got on with some work.

Tomorrow… who knows? I may have figured out that curry sauce recipe! =)
